I swear I have the largest recipe collection in the world! Besides having a cookbook collection, I have acquired recipes through recipe swaps by mail as well as from online recipe sites...where it's free to make a personal recipe box on the sites. Below is a favorite family recipe we use at most holidays.
FROG EYE SALAD
1 1/3c acini de pepe(uncooked)
1 1/4c milk
2c cool whip
1 can mandarin oranges
1 can pineapple chunks(reserve 1/4c juice)
1 can fruit cocktail
1 sm pkg instant vanilla pudding
2c miniature marshmallows
1/4c sugar
Cook pasta in boiling water for 11 min. meanwhile, in lg bowl mix milk, reserved juice, pudding, and sugar on med speed for 2 min. drain fruit well(after saving juice). drain cooked pasta, running cold water over it-drain well. add fruit, pasta, marshmallows, and cool whip to pudding mixture and mix well. Cool for up to 4 hrs or overnight before serving.
